Avocado Fried Egg Spaghetti
Jump to recipeI have to share this recipe. It’s one of those that I pulled out of the air, but is so good that I can’t keep it to myself! Even if you think this is a weird combination, please oh please try this avocado fried egg spaghetti! You will not regret it.
Lunch at Home
Working at home has made lunch time kind of fun for me. Madre and I eat together a lot, and we enjoy trying new things. We’ll often eat meals that have ingredients Coach and the girls don’t like, like spinach and goat cheese flat bread pizzas (we buy these frozen, so don’t go thinking we’re five-star chefs), and anything loaded with mushrooms or olives. Lately I’ve been drooling over all the fried egg spaghetti recipes (yes, fried egg spaghetti is a thing…who knew?) I’ve been seeing on Pinterest, like this one and this one. One day I just decided to create my own out of ingredients I had on hand, and avocado fried egg spaghetti was born! I haven’t even made it for Madre yet, but I will. I was forced to promise to make it for Jimmie, as well. If I could just get them both here at the same time, it would be the perfect lunch!
Avocado Fried Egg Spaghetti
If your family loves all of these ingredients and you think they’d gobble it up, then you should double the recipe for a family of four. My avocado fried egg spaghetti recipe only serves two, and it’s the perfect lunch portion. If I’m being honest, though, I should tell you that I used an entire avocado on my own plate each time I made it. I didn’t have anyone to share with, and I didn’t see the need in wasting it, right?
If you like your fried eggs cooked all the way through, I’m sorry. Avocado fried egg spaghetti might still be good that way, but to me, the yummy egg yolk running down over all the creamy avocado, cheese and spaghetti is what makes this dish so divine! A little dab of sour cream is a must as well…it adds a little tang that can’t be described. I’m telling you, give this dish try!
Do you experiment with different ingredients and create dishes? I know I’m not the only one. Sometimes the only way to find something really good and different than the “routine” is to get creative and throw a bunch of ingredients together. I’ve created several recipes this way that have become keepers! I’ve also created some disasters that resulted in a last-minute trip to grab take-out, but such is life. Thankfully, avocado fried egg spaghetti is a definite keeper, and it’s super-simple. Cook the pasta, top with the cheese and avocado, fry the egg, pile it on top, warm the tomatoes through, dump them on, then finish with a blob of sour cream. That’s it! Here’s the recipe for two; simply double it to feed four!
Ingredients
- 4 oz. Thin Spaghetti
- 1 Roma tomato or a handful of grape tomatoes
- 1 Hass Avocado
- 2 Eggs
- Shredded Monterey Jack cheese
- 2 Dollops of sour cream
- Salt and pepper to taste
Instructions
- Cook the spaghetti according to the package directions.
- While it’s cooking, you can slice your avocado and rough-chop your tomato, or halve your grape tomatoes.
- Once the pasta is done, drizzle with a little olive oil to keep it from sticking together.
- Plate your pasta, and top it with some cheese.
- Fry your egg how you like it…I like mine over medium (I want a little yolk to ooze out)
- Meanwhile, arrange the avocado on top of the pasta and cheese.
- Top with the fried egg, then toss the tomatoes around in the hot egg skillet, just to heat through and brighten the flavor. Add them to the plate.
- Season with salt and pepper, and top with a dollop of sour cream.
- Serve immediately.

Martie, I don’t even know what this is. I must be living in a cave. I cannot imagine having spaghetti and eggs together, except if its lo mein. Hum but this is a totally different thing because the egg is fried. Now the more I thnk about it the more I think I can wrap my mind around it and maybe give it a try. Thanks for joining us Martie. I’ll be over soon although it may take me a while to swim over the Atlantic! 😉

I promise, it’s really good! Another favorite Italian dish is spaghetti carbonara, which is basically bacon and egg spaghetti. The eggs are beaten and cooked just enough to make a creamy sauce. Eggs and spaghetti make a lovely marriage! Lol!
